Mother’s Day celebrations have more than a touch of tradition: Flowers and a card, accompanied by either breakfast in bed or a decadent brunch.

More than half of Americans plan to take Mom out for a holiday meal, spending an average $55.52, according to the National Retail Federation.

But if you really want to impress her, put your financial savvy and cooking skills to good use with a creative, inexpensive Mother’s Day brunch at home.

(That’ll leave you that much more in the budget for flowers, jewelry or another gift.)

We asked chefs, bloggers and other foodies what they’re making Mom this year.

German Pancakes

“Mom gets a delicious breakfast, and the kids have fun surprising mom and baking this dramatic breakfast,” says Greg Ford of NGACooking.com.

(His site stands for “No Girls Allowed,” also the name of his cookbook.)

“It will puff up magnificently while in the oven, to the oohs and ahhs of the kids and probably dad, too, and then fall as gently as a ballerina as it is taken out.”

To make, preheat the oven to 400°F. Place six eggs, 1 cup milk, 1 cup flour, and ½ teaspoon salt in a blender. Cover and process until smooth.

Melt 2 tablespoons butter and place into a 9×13 baking dish; add the pancake batter. Bake for 20 minutes.

Dust with powdered sugar and eat right away with your favorite syrups or toppings.

Apple and Cheddar Frittata

Savory frittatas aren’t unusual, but this version, from Martha Stewart for the March of Dimes, incorporates some sweet notes with sliced Gala apples.

Diner Breakfast Cookies

“Even dads 

who’ve never baked before will find [these] do-able and fun,” says Cookies for Grown-Ups author Kelly Cooper.

She recommends serving these savory cookies instead of toast with eggs and other breakfast dishes.

To make, fry one cup breakfast sausage (crumbled patties or roughly chopped links) until it is cooked.

Sauté in the oil 1 cup peeled and chopper Yukon Gold potatoes and ¼ cup finely chopped onion, until cooked but not quite soft.

Set aside to cool.

½ teaspoon baking soda and ½ teaspoon salt in a large bowl.

Gently stir in
½ cup melted butter. Mix together with fingers, handling as little as possible (the dough
 will be fluffier when not overworked).

Gently fold 1 cup milk into the dough,
 using fingers to mix. Then fold in sausage,
 potatoes and onion. Drop dough by the teaspoonful
on a nonstick baking sheet.

Slightly beat two eggs and lightly brush tops of 

cookies with the egg mixture. Sprinkle with a few chives. Bake for 15 minutes or

 until bottoms and edges are golden.

Caramelized Doughnut Crisps

If your cooking skills run more to takeout than baking, this eMeals recipe that elevates store-bought doughnuts, using hazelnut spread and a Panini press, might be right up your alley.

Spicy Fruit Salad

Weird but true: Tabasco has a brunch-y fruit salad recipe.

To make, toss together 4 cups honeydew melon chunks, 
4 cups cantaloupe melon chunks,
 4 cups pineapple chunks, 4 cups red or green seedless grapes,
 2 cups hulled and sliced strawberries, and
 two peeled and sliced kiwi fruit.

In a separate bowl, combine 2 cups low-fat vanilla yogurt,
 2 tablespoons Tabasco Green Jalapeño sauce, 2 tablespoons honey and
 2 tablespoons grated orange peel.

Spoon Spicy Yogurt Sauce over each serving of fruit salad.

Maple Bacon Cookies

For those who want a sweeter breakfast cookie, Cooper also makes a version with maple syrup and bacon.
